So if you have 3 stanzas: S1 S2 S3 You can do 1 and 2 or 2 and 3, but not 1 and 3. That is because 1 and 3 are not adjoining.

I believe that that means to write a few sentences from one stanza and then finish the necessary amount of sentences from the stanza below.

No, your works fine. The fact that you start wih some stanza and take the one below it is also a decent version of adjoining. It is all about them being connected or next to each other.
