Alex had $234 in his bank account. For an entire month, Alex adds $2.10/day to the account. He graphs the money he saves versus time. He plots money saved along the vertical axis, and he plots time in days along the horizontal axis. What is the y-intercept of the line?

You don't need to find the line to solve for the y-intercept. The y-intercept simply means that it is the value of the function when x=0, or in this case how much money Alex has on day 0. We know that before he started saving, he had $234, so that would be the answer.
