There are numerous types of fat. Your body makes its own fat from taking in excess calories. Some fats are found in foods from plants and animals and are known as dietary fat. Dietary fat is a macronutrient that provides energy for your body. Fat is essential to your health because it supports a number of your body's functions. Some vitamins, for instance, must have fat to dissolve and nourish your body.
I think you are referring to HDL and LDL proteins. :-) there is no fat that is better for you than others (at first approximation, at least...there are, but not for this case). fat, such as cholesterol, is carried to the metabolizing cells via lipoproteins. these are basically chunks of fat encased by a carrier, like a ferry. lipoproteins a classified by their size. the smaller the complex, the more dense it is. the classification works in this way. the biggest globuli are called 'very low density lipoproteins' (VLDL). if they deliver some of the fat they contain, they become 'low density lipoproteins' (LDL). if they again get smaller, we talk about HDL (high density lipoproteins). now, VLDL and LDL carry cholesterol INTO the peripheral tissues. there is a chance that some of the cholesterol is lost on the way and can possibly clog the blood vessels, leading to all kinds of problems. that's why we call them 'bad cholesterol' for some reason - even though there is no such thing as bad cholesterol, technically ^^ HDL, on the other hand, carries cholesterol from peripheral tissues to the liver, where it gets degraded. this is why HDL are referred to as 'good cholesterol', because it prevents arterial clogging. to sum it up: biochemically, there is no good or bad fat. if you want to check whether a person has 'high cholesterol', you check the concentrations of HDL vs. LDL in the blood stream. lo HDL and high LDL is a bad sign.
