Why might have some Buddhists and low-caste Hindus of the Indian subcontinent been attracted to Islam in the 7th century? They were attracted by the egalitarian beliefs and social organization of Islam. They saw conversion as a way to overthrow oppressive Hindu monarchs. They would not have to pay Hindu religious taxes to Islamic rulers. They feared they would be killed by Arab invaders if they did not convert.
