Why is coal not classified as a mineral?

OpenStudy (anonymous):

Coal is not considered a mineral because it is a rock that is formed from decayed plants and animals while minerals are described as being inorganic. The term inorganic means they are neither plants nor animals

OpenStudy (anonymous):

A mineral is an inorganic substance that forms with a crystal structure. Coal is an organic substance, so therefore it is not a mineral.
