The first sentence should acquire the readers attention, then an appropriate sentence or two to transit to the subject of the essay. The "attention gainer" should relate someway to the subject, use that relationship to make the transition.

Potato chips are unhealthy because of their high sodium content, lack of nutrients, and high amounts of saturated fat. While all three are factors that contribute to the unhealthy nature of potato chips, high sodium is perhaps the most dominant.
