I'll say leaves cause they have chlorophyll which enables the plants to perform photosynthesis and synthesize their food. Though there are plants like Opuntia (a kind of cactus) which has chlorophyll in their stems. Also there are some plants like cascutta which do not perform photosynthesis at all.
I would say the roots are the most important part. Plants, like all other organisms cannot survive without food and water. The roots are the plant's primary means of taking in nutrients and water. Also, without the water taken in by the roots, it is impossible for the plant to perform photosynthesis (as the photosynthesis equation is water+carbon dioxide+sunlight -> glucose+oxygen).
