What does it mean to say a recording is in stereo?

Stereo sound or recording is when a sound is reproduced and it my sound like you are hearing maybe an echo... The type of sound you would hear in a cinema. It is caused when in a unique reproduction, 2 or more sound independetly and difference phased sound waves are reproduced in a unique system.

Yep ^. You may have heard of 'mono'. That refers to only have one sound channel. 'Stereo' is just more than one sound channel. So there will be slight offsets in each channel for the same sound at the same instant in time. This offset produces surround sound type quality, like what hoslos said above.
