basically fermentation means the chemical breakdown of a substance by bacteria, yeasts, or other microorganisms, typically involving effervescence and the giving off of heat.

isn't it the same thing as in glycolysis?

sort of / not exactly. glycosis is the breakdown of glucose by enzymes, releasing energy and pyruvic acid.
