So the reason they go from high to low is due to something called brownian motion.
The particles/molecules are moving around and they keep colliding with eachother. that makes them spread out/diffuse until the get to a point that they are the furthest away from each other(Think of a fart!!). The key thing to note is that the distribution of the substance is trying to become equal!
