We need a better experiment. It might be Exponential Decay, but that measures how much salt is NOT dissolved and isn't really what is being asked.

Well, that's why I said we need a better question. If we are going to see "how long", that's a stop watch problem and there is no need of a model or function. Just click the stop watch when it's gone. We need a better question.
