Simply speaking, Ambassadors are greeters for open study. Their purposes is to welcome new users and help them understand how the site works.

Moderators are the users in purple, they are people appointed by the OpenStudy Team members to enforce law and by law I mean code of conduct and Terms and Conditions of OpenStudy.
