How do you toggle openstudy titles? Like if you want to disable, or enable a trophy title?

Sadly you can't do it. If you have more than one title for same subject then the higher title will be displayed.

But if you have titles for different subjects, you can just toggle between the highest?

Yes it shows based on the topic you are answering. For example mathematics title will not show up in biology or any other section.
