why does evergreen trees produce cones

It is part of their reproductive cycle. The cones (just like Pine cones) hold seeds within them. The purpose of the cone is to protect the seeds from getting damaged or eaten by predators like birds, once it is time to release the seeds ( in hope of producing another tree) the cones will open up. So the whole point of a cone to evergreen trees is to make more of them. :)

They don't have a seed coat in Gymnosperms. Think of apples or peaches. The is the outer rind, the soft tissue we eat, and then a seed or seeds. Well, Gymnospersm just have the seeds so the cones are what protect the pollen and seeds until it is safe to be released.

Gymnosperm means naked seed.
