Why is the enzyme pectinase added during the manufacture of fruit juices?

To break down pectin. Degradation of polysaccharides in plants.Pectin helps "cement" fruit cells together. The pectin (which is actually a name for several different kinds of enzymes) breaks this down, making juice extraction more efficient.
