What are the roles of allolactose in the lac operon and tryptophan in the trp operon

They regulate whether the operon is on or not. For lactose, when it is present, it binds to the repressor protein and allows RNA to be transcribed. When tryptophan builds up, then it binds to the repressor to stop RNA from being transcribed.
