Slide Sorter: Organize the order of your slides.
Slide Show: Preview the presentation.
Normal: This is just how you are viewing it in the editor.
Reduced: I don't know, I think it just reduces the size of the slides but I've never used this so I would cross it out.

When you want to see how the slide show will go through, you can use that option to pass through it yourself for a preview.
