Acceleration: Why is the acceleration of a particle in projectile motion always directed down?

OpenStudy (anonymous):

The acceleration (due to gravity) is always directed to the centre of the Earth, which for all practical purposes is vertically down. Neglecting air resistance the sideways motion is at a constant speed, that is zero acceleration.
