well the easiest way to explain it is you change the word form depending on who you are talking to/about. The infinitive is just the plain verb. So from your example the infinite is: querer. Which in english translate directly to: To Want (this is an infinitive). But when you talk about people, like I want, or you want, you have to change the form of the the infinitive which sometimes means the middle of the word, not just the ending.

So querer happens to be a stem changer. It is e->ie. So u change the u in the word to ie. Quiero, quieres, quiere etc.
