It’s easy to tell when broccoli is ready to harvest because the head is full-size, and it’s firm and tight. If the head starts to separate into loose little clumps, then I’ve waited too long and the broccoli will taste bitter. I also know I’ve waited too long if the plant forms yellow flowers, a sure sign that it is bolting. This indicates that all the plant’s energy has shifted to producing seeds.

What does it mean when the broccoli is said to be bolting? It is nearly ripe for picking. It needs to be transplanted. It has stopped producing food. It has become weak and sickly.
