In the Earth’s orbit around the Sun, what is the lever arm for this arrangement?

Well, I suppose you could look at it in the terms of torques. The fulcrum would have to be the center of mass. This is the point that both the sun and the earth are "pivoting" around. The center of mass of the earth-sun system is actually inside the sun, as the sun is MUCH more massive than the earth. It's actually really close to the center of the sun. The lever arm would then be approximately the distance from the center of mass to the earth, or approximately the distance from the sun to the earth. I'm not sure if you need more detail than that.
