because of an acid-base reaction. Baking soda is a bicarbonate (NaHCO3) and vinegar is an acetic acid (HCH3COO). One of the products this reaction creates is carbon dioxide.

they do react, and that is all we know for sure.  what you are asking for is some exposition on some theory.  not "why"  because why is just nature, right?

^ what he said , science only explain so much till its just gets to the point : it is because thats just how it is , not really sure what more you were trying to accomplish with this question other than the straight scientific answer.
