Barbecue refers to meat that is slowly prepared over wood or charcoal. Therefore, barbecue may have come from the Spanish word barbacoa. It also refers to cooking meat over wood slowly. Depending where you are, different states have their own version of barbecue. If you’re in Tennessee, the barbecue is pulled pork-shoulder. In Texas, you can have pulled pork or you can have brisket. In contrast, Kansas makes ribs, and North Carolina uses the whole hog. Each of these states also has their own special sauce. Even though these states have different ideas for it, the barbecue is meant to bring people together.
