Okay, so if I'm not wrong, the 3 to 1 ratio means that for every 3 pounds of beef, there will be 1 pound of pork. That as it is adds to 4 pounds of meat, so if it was doubled, it would be slightly over the 7 pounds of meat used: 6 pounds of beef, 2 pounds of pork which means there is slightly less then double of that number. I'll calculate this out hang on a second.
Sorry it's taking forever! 4 pounds beef = 1.3 pound pork 5 pounds beef = 1.6 pound pork 5.75 pounds = 1.8475 pound pork It's around this amount^ but it goes slightly over 7 pounds (7.5975)
5.5 pounds beef = 1.765 pound pork is closer (7.265) Mixed number of amount of pork used = 1 and 8/10
