Thats probably a hard question to answer as it is kind of a general question, however, during ancient times, when the king and queen owned all land, he/she would award a trusty knight an estate in their name as a token of their gratitude.

Yeah that's a tough question. After the knight would die, the receiver written in his will would receive the property and all the rights that come with it. Although in reality, the land has always and still is the governments if they decided to take it away from you.
