Depends on what war...there are several factors, really.

Wouldn't some just join, or some would volunteer, or maybe they would just draft some people?

The most common type is by drafting, especially for international wars like Vietnam. There weren't quite a bunch of volunteers willing to go to a foreign land and not be used to that terrain (bunch of casualties)
