The food/bolus will, after having passed the esophagus, enter the stomach. The inside walls of the stomach will then start secreting HCl to kill unwelcome bacteria to prevent food poisoning. The acidic HCl also makes the optimum conditions for the enzyme pepsine which starts the digestions of proteins into polypeptides and amino acids. Another thing to mention might be the mucus lines inside the stomach walls to prevent the acidic HCl from making any damage.
