Why did the Roman Empire produce more coins?

The Roman Empire produced more coins because the empire was growing too rapidly and was at war. The didnt really produce "more coins" they took original coins and cut their value in half, back then, that was today's inflation. Everything in Rome, the price rose so their government got more money.
