A complete sentence would be:
The man I saw yesterday was eating turkey. 

A run-on sentence would be:
The handsome man with blue shoes was eating some turkey that looked really, really old.
(Way too long!)

An incomplete sentence is a sentence that is incomplete (A tad obvious :P)
'The man I saw yesterday' is a great example of that!
