Neither of the students could find (his, their) notes from last week’s seminar Would it be "their" because "students" is plural ?

It would be "their" because we dont know if the students are all boys or not and because it is also plural.

Neither is singular which would make the correct option "his", but students is plural which would make it "their" so this is why i am confused

The correct answer here was "his", because *like I though earlier* Neither is singular, so the pronoun had to be singular.
