What is the purpose of sugar in the fermentation process?

help speed up the process if the amount of sugar added makes up to 8% of the ingredients present, more then that and it will begin to suffocate yeast and slow down the fermentation process

Sugar is the substrate or starting product for the fermentation process. It gets broken down into alcohol by growing the yeast cells in a sugar solution under anaerobic (without air) conditions.
