The right answer for the fist one is:
Il a les yeux vert\(\color {red} s\).
There is no reason for "il" to agree with "les yeux".
"yeux" is plural because everyone has 2 eyes.
All the following sentences are correct:
Il a le nez rouge.
Nous avons le nez rouge.
Ils/Elles ont le nez rouge.
Unlike in English, even if the subject is plural, "nose" remains singular.
J'ai les yeux bleus.
Il a les yeux verts.
Ils ont les yeux noirs.
