That's an interesting chart. 
May I suggest a way to look at the Columbian Exchange that may help?

Before Columbus, the Earth supported two different worlds. There was probably some earlier exchanges but AfroEurAsia existed by itself for the most part. And the Americas existed as another. They didn't know about each other.
