How can we use rocks to determine how an area used to look in the past?

Some sorts of rocks are sedimentary, they were created by building up sands in the sea. Then, they were tossed around and such. Usually, the layers of sand (which were horizontal before) can be clearly seen and give us a clue, and this rock must have been from around the ocean.
