What is the def of line of best fit? i.e. what is the line trying to do?

You want a line of best fit to have the least vertical error (distance from all the points added up).

the def doesn't care about the origin, or touching every point.

Yes and it should tell you the general direction of the points, note that it doesn't have to go through EVERY point, actually it doesn't have to go through any.
