Two dices are thrown. Find probability that the sum of the numbers on dices will be lesser than 8.

Is there a way to solve this problem without manually writing out each probability? (when one dice is 6 another must be 1, when 5 - 1 or 2 and so on)

;) Well, I know that the answer is 21/36 and we obtain 21 by adding everything from 1 to 6 inclusive, but are there any ways to show this in some kind of theorem?

Well there are no theorems for such events. It is just a logical type question which doesn't require complex math so I would be surprised if there exist some theorem for this
