Because you are reading the wrong books. If you live in the US and attend an "American" school you are going to get history that Americans think is important. This isn't a bad thing. Every society picks and chooses what is information is important to pass to the next generation. There is far more world history available than could ever fit into one student's educational lifetime. So we do a bit of triage and decide what to study and what to leave out. Persian history is rich and full. There are books, courses and such available if you really want to learn about Persia. If you speak Farsi, there's even more.
