By definition, a function is a relation that assigns any input to exactly one output. By drawing arbitrary vertical lines and checking that the graph of the relation intersects any such line at most once you can graphically verify that the relation is indeed a function. If a vertical line were to intersect more than once, then that would mean the relation assigns an input to more than one outputs, which violates the definition of a function.
