Personally I would keep it keep it as 9/8 

There's no correct way to write it unless it specifically askes in the question. You have free choice however so its whatever you think looks the nicest.

In this case however, 9/8 is just as accurate as 1.125 or 1+1/8

The argument for fraction accuracy is only valid for recurring decimals, such as 1/3 or 4/7 for example.
