This passage is quite informal. Its tone is laid back and relaxed, not at all like you would actually speak when giving a presentation such as this.

yup, it's very very very informal slang. The "in crowd" would know exactly what was being said. the outsider would be baffled. Sort of thing I'd expect from a cookery tv show if one of the presenters went slightly loopy.
