Why is the root tip of the onion the best place to find plant cells undergoing mitosis?

That is where the plant grows from. Mitosis is all about growth and development. So it makes sense that the root is the best location.

The root tip,or the sub-apical part of the root to be more precise, is where active mitosis takes place. And due to this reason this region would show the maximum number of cells in different stages of mitosis
