Amylase works at an optimum pH of 6.7 - 7.0 (very weakly acidic to neutral). The acid in our stomachs has a pH of about 2.0. All enzymes need the environment around them to be perfect so they can work, and the pH is not right. This is why amylase stops working when the food we swallow reaches our stomach.
