Weeeeeeell......."El plato Cubano es de Brasil" dosen't really make sense, since you're saying "The Cuban dish is from Brazil" and those are two different countries...XD 
Perhaps "El plato Cubano es de Cuba" or "El plato Brazilieno es de Brazil".

For the second one, you are absolutely correct, just with the accents missing in "Arroz", but idk if your class requires that.
