he was driven crazy by all the people that were bothering him when he was busy and cut BOTH ears off so he didn't have to listen o all the bs from other people and so he can hear himself think cause it is nice to hear your self think every once in a while

There are numerous takes on what exactly happened to his ear, but the one that is agreed upon is that in the midst of a psychological meltdown, Van Gogh cut off his own ear and delivered it to his girlfriend as, I'm guessing, some proclamation of his love and loyalty to her.
