In laymen language, identify the verbs in each option, and then see if you could put an 'equal sign' to replace those verbs. For instance, in the first example, 'peeled' is the verb. But you can't really say they=four pounds of potatoes.

Contrarily if the sentence was: They are four pounds of potates 'are' is the verb and you could put an equal sign They=four pounds of potatoes so here 'are' could qualify as a linking verb, though it wouldn't make much sense quite literally.
