I would think that if you were to emphasized in this step of the reading would be choice a. This is because choice c isn't essential enough to be emphasized, and isn't the main point. Like, emphasizing to watch the water isn't very useful. Whereas rapidly rotate the bottles in a horizontal circle  seems like a point to be emphasized in this step,
