In this link for the project the easiest thing for you to do your project as would be probably a "slide set" aka a slideshow.  Then all you have to do is make a Summary of what you have learned in this class.

As your teacher requested "You must include a video lesson, where you teach a concept from one of the units." 
Choose a Concept from a lesson and make a video, After you finish the project make sure you check the rubric and make sure you have ALL of the details necessary. For any further details please @ me and I will come and answer what your concern and/or question is.
