The rooster will jump onto the hen, usually grabbing her feathers or comb to gain balance, then will do the deed. I'd say mating naturally happens on its own, it's in their blood to mate. And I don't know why you would breed chickens? But I'd say learn at least a little about it first and make sure the rooster isn't too aggressive towards the hen.
