This seems like a good line of thinking. It might be a good idea to start with what kind of input you want to get from the user, as well as how you would organize that input to produce the output. For example, you might want to get the name of the person writing the Thank You note, as well as the name of the person the note is for. You might also want to get some information about what the Thank You is about. And probably other information as well. Based on the input, the program can figure out what to print as an output in order to make the message of the note.
