How did a surplus of crops lead to a more complex society?

when food is limited/scarce, then pretty much everyone in a society has to gather/produce food. when food is in surplus, then some people can be free to work in other sectors. that way, a society can develop items, technologies, etc. that aren't directly related to food production.
